Hellmann’s and Turkey, Better Together

I am always on the lookout for new recipes to feed my family. I think, like most families, we get stuck in a rut of eating the same things over and over again.

I remember making meatloaf when my oldest was really young, maybe three years old. He saw the finished meatloaf and was really excited by it. I thought that was a little odd, since he tended to be a picky eater. He climbed up onto his chair at dinner time and eagerly took a bite of the meatloaf. He made a face that let me know he was not happy and wailed, “This is the worst cake ever!”

Oh how I laughed. He had seen me make it. Watched me put it into the oven. Heard me call it meatloaf. And yet, in his little mind, he thought it was going to be cake. I don’t know that he has ever really forgiven me.

So, for the Hellmann’s® Turkey Challenge, I made one of their recipes called Savory Turkey Loaf. This is my favorite kind of recipe: easy. And to be honest, before this, I have never used mayonnaise for anything other than sandwiches.

That is about as wild and crazy as things get over here these days.

You will need:

2 lbs. ground turkey

3/4 cup Italian seasoned bread crumbs

1 envelope Knorr® French Onion recipe mix

2 eggs 1/4 cup water

1/3 cup Hellmann’s® or Best Foods® Real Mayonnaise

Preheat oven to 350°

Combine all ingredients in large bowl. (Love this. Just ONE bowl to clean up afterward!)

Shape into a loaf in a pan that you have sprayed thoroughly with cooking spray.

Bake at 350° for 1 hour 10 minutes or until done.

Let stand 10 minutes before serving.

I think they say to wait the ten minutes so that it doesn’t fall apart when you turn over your loaf pan to remove it. I did not wait for ten minutes, and my meatloaf broke.

The recipe said you could drizzle it with barbecue sauce, but my kids prefer to use ketchup. They think of meatloaf as a gigantic hamburger. Hey, whatever, as long as they eat it. And eat it they did. Every single one of them, even the professed meatloaf hater, loved this meatloaf recipe. I am definitely adding it to my list of meals to be on the rotation.

    Turkey leftovers? What are these ‘turkey leftovers’ you speak of? Haha - seriously though - we don’t have a lot of turkey meat left over, but we do take the carcass and turn it into turkey stock for soup. It freezes well and adding frozen veggies to it make for a pretty good soup.

    We’re boring. Most of the leftovers will become turkey stuffing cranberry sauce sandwiches. The carcass will become soup. If there’s enough turkey, I might turn some of it into turkey curry.

    I plan to use my turkey leftovers to make a turkey pot pie. Chop the leftover turkey into chunks, add a condensed creamy soup, some mixed veggies, and a pie crust on top. Stick the whole mess in the oven, and it’s a delicious weeknight dinner.

    We like making left-over turkey sandwiches. Spread Hellmann’s mayonnaise on 1 of 2 slices of excessively processed squishy white bread, put bits of turkey (no veins or gristly stuff!), then add thin slices of canned cranberry gel-goop and a slice of congealed cold gravy. Don’t look at it or think about it, just eat it. YUM! Note: We only buy Hellmann’s. I’m not just sucking up, it’s true.

    My favorite way to use turkey leftovers is a turkey sandwich: turkey, lettuce, cranberry sauce, mayo, salt, and pepper. However, since I am doing a low-carb diet right now, I probably will just use the turkey leftovers in a salad. :(

    My husband is leaving on a hunting trip the day after Thanksgiving, so almost all of the leftover turkey will be sliced and sent with him for sandwich meat. The remaining meat and bones will be boiled for soup.

    Thanks for posting this recipe. I tried a turkey meatloaf years ago, and was not impressed. I’ve wanted to try it again but just didn’t get around to searching for a new recipe. I am curious, was this recipe big enough for all of you? Or will I need to increase the amount to feed my similarly-sized family? And I hope you are enjoying the somewhat cooler weather down there. We’ve already had a huge snowstorm. bleh.

    If there are left overs the first time around we just warm it up. Then we get into sandwiches. I’ve also made turkey noodle soup. I was suprised at how good it was. That was the first time I had made home made soup.

    We eat hot turkey sandwiches with LOTS of gravy, and then cold turkey sandwiches with mayo (Hellman’s OF COURSE!) , cranberry sauce and stuffing if there is any left…

    When I moved out west when I was first married, the first things my mother reminded me if (They had lived in CA for years and moved East when I was 2) was that 1. Butter would come in different length sticks, and 2. Hellmans was Best Foods.
    Yes, Mayo is that important to me :)

    Thanksgiving meal? It’s OK, but it’s all about the leftovers for us. Our favorite is a “Thanksgiving Stromboli”–turkey, potatoes, stuffing, Crasins and a little aged cheddar all tucked into refrigerated pizza dough, baked and then dipped in gravy. Y-U-M!

    I make individual baggies of Turkey for my lunch every year as I am a HUGE turkey lover. It helps to have something quick and healthy to take out come the New Year when I have over indulged at the buffet lines. We first use the leftover turkey for grilled turkey and provolone sandwiches, then I also cube a few cups for a hot turkey and veggie pot pie to serve on a cold winter day! I usually cook a 20-25 lb turkey for just the dozen or so of us, so we have plenty of leftovers!

    Well, if there’s any left after turkey sandwiches, my MIL gave me this great recipe a few years ago that I use occasionally — it’s called “Thanksgiving Casserole” or something like that and it has mayo, cream of celery soup, chopped onion, chopped celery, cooked turkey breast, water chestnuts, and slivered almonds all mixed up and topped with cornbread stuffing mix that’s been mixed with melted butter. We serve it with wild rice and cranberry sauce. YUM.

    My daughter and her friend cooked a turkey upside down because they (seriously) didn’t know any better! Best turkey ever. Nothing but Hellman’s in this house - ever.
