Hellmann’s and Turkey, Better Together
November 30, 2011
I am always on the lookout for new recipes to feed my family. I think, like most families, we get stuck in a rut of eating the same things over and over again.
I remember making meatloaf when my oldest was really young, maybe three years old. He saw the finished meatloaf and was really excited by it. I thought that was a little odd, since he tended to be a picky eater. He climbed up onto his chair at dinner time and eagerly took a bite of the meatloaf. He made a face that let me know he was not happy and wailed, “This is the worst cake ever!”
Oh how I laughed. He had seen me make it. Watched me put it into the oven. Heard me call it meatloaf. And yet, in his little mind, he thought it was going to be cake. I don’t know that he has ever really forgiven me.
So, for the Hellmann’s® Turkey Challenge, I made one of their recipes called Savory Turkey Loaf. This is my favorite kind of recipe: easy. And to be honest, before this, I have never used mayonnaise for anything other than sandwiches.
That is about as wild and crazy as things get over here these days.
You will need:
2 lbs. ground turkey
3/4 cup Italian seasoned bread crumbs
1 envelope Knorr® French Onion recipe mix
2 eggs 1/4 cup water
1/3 cup Hellmann’s® or Best Foods® Real Mayonnaise
Preheat oven to 350°
Combine all ingredients in large bowl. (Love this. Just ONE bowl to clean up afterward!)
Shape into a loaf in a pan that you have sprayed thoroughly with cooking spray.
Bake at 350° for 1 hour 10 minutes or until done.
Let stand 10 minutes before serving.
I think they say to wait the ten minutes so that it doesn’t fall apart when you turn over your loaf pan to remove it. I did not wait for ten minutes, and my meatloaf broke.
The recipe said you could drizzle it with barbecue sauce, but my kids prefer to use ketchup. They think of meatloaf as a gigantic hamburger. Hey, whatever, as long as they eat it. And eat it they did. Every single one of them, even the professed meatloaf hater, loved this meatloaf recipe. I am definitely adding it to my list of meals to be on the rotation.

My four sons will be home from college. Leftovers? Ha!
November 14th, 2011 at 10:23 amTurkey leftovers? What are these ‘turkey leftovers’ you speak of? Haha - seriously though - we don’t have a lot of turkey meat left over, but we do take the carcass and turn it into turkey stock for soup. It freezes well and adding frozen veggies to it make for a pretty good soup.
November 14th, 2011 at 10:26 amYea! Comments are opened!!
Shredded turkey and mayo sandwich’s. That is the ONLY thing I use my turkey leftovers for. Why would I mess up something so yummy?!
November 14th, 2011 at 10:26 amNot much of a meatloaf lover here. But I do enjoy free $!
November 14th, 2011 at 10:27 amWe’re boring. Most of the leftovers will become turkey stuffing cranberry sauce sandwiches. The carcass will become soup. If there’s enough turkey, I might turn some of it into turkey curry.
November 14th, 2011 at 10:54 amUnfortunately - we are driving 9 hours to the in-laws for Thanksgiving - so I will have no leftovers to deal with. I plan to eat as much turkey as allowed while we are there!
Thanks for sharing this turkey meatloaf recipe - I plan to try it this week!
November 14th, 2011 at 10:57 amI will make turkey sandwiches with cranberry and stuffing. Yuuuummmmm.
thanks for the chance, Chris!
November 14th, 2011 at 11:00 amI have two favorites; the delicious turkey sandwich, a casserole that is layered turkey, potatoes, stuffing, & gravy poured all over the top of it. I am so hungry right now
November 14th, 2011 at 11:13 amSince I am pregnant and can’t have normal lunchmeat, I plan to finally indulge my cold turkey sandwich cravings!! It is absurd to be this excited about cold poultry, I know.
November 14th, 2011 at 11:42 amI plan to use my turkey leftovers to make a turkey pot pie. Chop the leftover turkey into chunks, add a condensed creamy soup, some mixed veggies, and a pie crust on top. Stick the whole mess in the oven, and it’s a delicious weeknight dinner.
November 14th, 2011 at 11:46 amLove cold turkey and mayo sandwiches.
November 14th, 2011 at 11:51 amWe like making left-over turkey sandwiches. Spread Hellmann’s mayonnaise on 1 of 2 slices of excessively processed squishy white bread, put bits of turkey (no veins or gristly stuff!), then add thin slices of canned cranberry gel-goop and a slice of congealed cold gravy. Don’t look at it or think about it, just eat it. YUM! Note: We only buy Hellmann’s. I’m not just sucking up, it’s true.
November 14th, 2011 at 11:52 amMmmm. Turkey! You reminded me that I have a recipe for a hot chicken salad that uses mayo, and I’m sure it would be even more delightful with left over turkey.
November 14th, 2011 at 11:53 amWe love to make turkey sandwiches, and sometimes my husband will chop up the leftovers and make a Shepard’s pie. The kids love Shepard’s pie!
November 14th, 2011 at 11:53 amUnfortunately my turkey leftovers tend to sit in the fridge for 3 days or so, then I throw them away. Nobody at my house (except me) is big on leftovers. Hopefully I can send them home with someone else this year!
November 14th, 2011 at 11:55 amI’m going to Oklahoma to be with my huge family so leftovers will be devoured quickly. Probably on a yum sandwich (with mayo)
November 14th, 2011 at 12:31 pmMy favorite way to use turkey leftovers is a turkey sandwich: turkey, lettuce, cranberry sauce, mayo, salt, and pepper. However, since I am doing a low-carb diet right now, I probably will just use the turkey leftovers in a salad.
November 14th, 2011 at 12:39 pmTurkey leftovers…always sandwiches and this year we’re going to try making some kind of breakfast casserole for the sunday afterwards!
November 14th, 2011 at 12:41 pmMy husband wouldn’t be able to live without his leftovers turkey panini.
November 14th, 2011 at 12:42 pmAny leftovers will probably end up in a casserole or turkey and dumplings.
November 14th, 2011 at 12:58 pmYum! This sounds good. Love the cake/loaf story! Sounds like something one of my girls would have done.
November 14th, 2011 at 1:12 pmWe will be guests this year (yay!), so I probably won’t have leftovers (boo!).
November 14th, 2011 at 1:45 pmMy husband is leaving on a hunting trip the day after Thanksgiving, so almost all of the leftover turkey will be sliced and sent with him for sandwich meat. The remaining meat and bones will be boiled for soup.
November 14th, 2011 at 1:51 pmTurkey soup, turkey sandwiches, turkey panini (press).. we’ll be all turkey’d out… Actually my plan is *not* to have too much turkey leftover and buy a smaller one so we don’t get sick of it
November 14th, 2011 at 1:59 pmThanks for posting this recipe. I tried a turkey meatloaf years ago, and was not impressed. I’ve wanted to try it again but just didn’t get around to searching for a new recipe. I am curious, was this recipe big enough for all of you? Or will I need to increase the amount to feed my similarly-sized family? And I hope you are enjoying the somewhat cooler weather down there. We’ve already had a huge snowstorm. bleh.
Chris says: I made two for my family.
November 14th, 2011 at 3:04 pmI plan to eat leftover turkey on a baguette smeared with leftover cranberry sauce, topped with brie and some fresh lettuce. Oooh, I am so, so excited for it!
November 14th, 2011 at 3:06 pmI plan on eating my leftovers. If there are any.
November 14th, 2011 at 3:43 pmIf there is any turkey left after the turkey, dressing and gravy sandwiches, I use it in an oven-baked risotto.
November 14th, 2011 at 4:05 pmI’m cooking Thanksgiving dinner for my mother-in-law (at her house) and will leave ALL my leftovers there for her to eat. >sadness< I will, however, mooch off of my sister and brother-in-law the next day at their house by eating their leftover turkey & fixings in a wonderfully delicious Turkey Sandwich!
November 14th, 2011 at 4:20 pmI plan on using my turkey leftovers for a lot of paninis and other sandwiches if there is any turkey left.
November 14th, 2011 at 4:29 pmTurkey casserole, substituting Turkey for chicken.
November 14th, 2011 at 4:32 pmI have 2 lbs of ground turkey in my freezer and I was wondering what to do with it — I think I know now! thanks!
November 14th, 2011 at 5:37 pmOpen faced sandwiches with turkey and mashed potatoes! Yum!
November 14th, 2011 at 6:03 pmMmm . . . turkey pot pie, turkey soup, turkey hash, turkey and brocoli casserole . . .
November 14th, 2011 at 6:04 pmI love love love your recipes you publish. Always delish.
November 14th, 2011 at 7:20 pmI will be making turkey sandwiches by the fistful and of course, the all important turkey and stuffing casserole. Yum.
November 14th, 2011 at 7:31 pmSo Hellman’s is not just for the leftovers on bread! I’m going to try smearing it on my turkey!
November 14th, 2011 at 7:48 pmUsually not many leftovers, so just a replay with whatever is left.
November 14th, 2011 at 8:11 pmFor turkey leftovers this season, I plan to make a thin-crust pizza with San Marzano tomatoes, mozzarella, turkey chunks, diced red and green pepper, and a touch of jalapeno!
November 14th, 2011 at 8:33 pmMy large extended family always prepares turkey several ways, one of which is smoked. Delish! I use the carcass to make stock for gumbo tvhe Saturday after the big day
November 14th, 2011 at 8:59 pmToday was a horrible horrible day. “This is the worst cake ever!” just made it great….cannot stop laughing.
November 14th, 2011 at 9:12 pmThank you~
I’m pretty boring but turkey leftovers are best in sandwiches with a hearty homemade bread!!!
November 14th, 2011 at 9:47 pmWe always make turkey croquets with the leftovers. Yum! Thanks for the chance to win
November 14th, 2011 at 10:43 pmI plan to slather left over turkey with a cranberry horseradish sause that I picked up over the weekend - can’t wait!!
November 14th, 2011 at 11:13 pmI plan on using leftovers for turkey club wraps and turkey salad.
November 14th, 2011 at 11:31 pmWe’ll have turkey/cranberry & stuffing sandwiches for leftovers. Easy & yummy.
November 15th, 2011 at 12:18 amI’d love to win the cooking/com gift card!
November 15th, 2011 at 12:53 amWe will probably be making salads and omlets with our turkey leftovers this year. Thanks for the opportunity!
November 15th, 2011 at 3:08 amI like to layer the leftovers in a two-crusted pie, so each slice is like Thanksgiving all over again, the lazy man’s way!
November 15th, 2011 at 7:20 amTurkey sandwich on seedless rye with Hellmann’s on one slice of bread and homemade cranberry sauce on the other slice of bread. Delish!
November 15th, 2011 at 7:32 amI think I will make some turkey salad.
November 15th, 2011 at 9:03 amWe plan on having turkey sandwiches!
November 15th, 2011 at 10:03 amWe like plain old turkey dinner leftovers with leftover mashed potatoes etc. but I also use the leftover turkey in an easy pot pie.
November 15th, 2011 at 1:31 pmI won’t have leftovers either since we go to my aunt’s house and there are too many people to fight for it, but oh how I love a cold turkey sandwich with mayo, lettuce, and tomato!!
November 15th, 2011 at 2:25 pmTurkey sandwiches with cranberry and mayo. Yummy! We will be at my in-laws this year so sadly no leftovers.
November 15th, 2011 at 3:12 pmGoing to make a turkey meatloaf, in the shape of a turkey. Wouldn’t that be hilarious? Actually, just probably going to..eat them?
November 15th, 2011 at 5:57 pmDid you use light or regular mayo for this recipe? I have been making your black bean corn salsa for years. Thanks for the great recipe!
November 15th, 2011 at 6:32 pmWe actually cook a second small turkey just for the leftovers, so that way there’s enough drumsticks.
November 15th, 2011 at 7:30 pmTurkey sandwiches, they are the best! I like them with stuffing, a little cranberry sauce and some mayo.
November 15th, 2011 at 9:16 pmI have a turkey casserole recipe my husband and I LOVE (not very healthy so we only do it 1x or 2x a year). Plus I’ll use leftovers in Turkey Pot Pie or Turkey Enchiladas or sandwiches. As my boys get older, we have fewer leftovers!
November 15th, 2011 at 9:28 pmI have a recipe for a casserole that has turkey, broccoli, hollandaise, and french fried onions. I make at least one of those with my leftover turkey!
November 15th, 2011 at 10:19 pmAlso tweeted about this, but can’t figure out how to post the url for the individual tweet. My handle is @heartisabloom if you want to see it!

November 16th, 2011 at 10:55 amIf there are left overs the first time around we just warm it up. Then we get into sandwiches. I’ve also made turkey noodle soup. I was suprised at how good it was. That was the first time I had made home made soup.
November 16th, 2011 at 11:38 amNothing’s better than a hot turkey sandwich on “Black Friday”.
November 16th, 2011 at 11:51 amSandwiches of course!
November 16th, 2011 at 11:57 amPersonally, my favorite is (we call it Best Foods here) plain leftover turkey with mayo on it. It’s the only thing I eat that way, but man, it’s good.
November 16th, 2011 at 12:47 pmTurkey noodle soup!
November 16th, 2011 at 1:42 pmHopefully there will be some leftovers — I love little turkey sandwiches on the leftover homemade dinner rolls with mayo!

November 20th, 2011 at 1:53 pmWe eat hot turkey sandwiches with LOTS of gravy, and then cold turkey sandwiches with mayo (Hellman’s OF COURSE!) , cranberry sauce and stuffing if there is any left…
When I moved out west when I was first married, the first things my mother reminded me if (They had lived in CA for years and moved East when I was 2) was that 1. Butter would come in different length sticks, and 2. Hellmans was Best Foods.
November 20th, 2011 at 6:14 pmYes, Mayo is that important to me
Thanksgiving meal? It’s OK, but it’s all about the leftovers for us. Our favorite is a “Thanksgiving Stromboli”–turkey, potatoes, stuffing, Crasins and a little aged cheddar all tucked into refrigerated pizza dough, baked and then dipped in gravy. Y-U-M!
November 20th, 2011 at 8:49 pmTurkey salad or turkey pot pie.
November 20th, 2011 at 9:07 pmWe never have leftovers as we tend to eat the whole turkey at once.

November 30th, 2011 at 4:09 pmI make individual baggies of Turkey for my lunch every year as I am a HUGE turkey lover. It helps to have something quick and healthy to take out come the New Year when I have over indulged at the buffet lines. We first use the leftover turkey for grilled turkey and provolone sandwiches, then I also cube a few cups for a hot turkey and veggie pot pie to serve on a cold winter day! I usually cook a 20-25 lb turkey for just the dozen or so of us, so we have plenty of leftovers!
thanks!

Well, if there’s any left after turkey sandwiches, my MIL gave me this great recipe a few years ago that I use occasionally — it’s called “Thanksgiving Casserole” or something like that and it has mayo, cream of celery soup, chopped onion, chopped celery, cooked turkey breast, water chestnuts, and slivered almonds all mixed up and topped with cornbread stuffing mix that’s been mixed with melted butter. We serve it with wild rice and cranberry sauce. YUM.

OK sounds fantastic, but you had me at “Hellmans and Turkey”
Seriously we always laugh about needing best foods for our leftover turkey sandwiches!
December 6th, 2011 at 7:54 pmMy family’s favorite dish is non traditional for thanksgiving but it involves pork chops cooked with apple sauce and stuffing. It makes a lot and it’s delicious!

December 7th, 2011 at 11:25 amMy daughter and her friend cooked a turkey upside down because they (seriously) didn’t know any better! Best turkey ever. Nothing but Hellman’s in this house - ever.
December 7th, 2011 at 7:42 pmI’m not eligible to win because I’m in Canada but I like to make sandwiches with the leftovers: turkey, toasted bread lots of salt and tons of mayo.

December 9th, 2011 at 2:14 amI’m hoping to try my hand at making a pot pie with turkey leftovers. Of course, I’ve been saying that for years and I never seem to manage the task.
